In 2012, I will be taking the first sabbatical leave from my current career (that is if I continue to do what I have been doing since 2002). To make sure that I make the most out of the two-month period doing nothing but what I've always want to do if I don't need to work, I decided it's not a bad idea to list all the things I want to do with my sabbatical so that I can spend my sabbatical without any regrets!
So, here are all the things that I've been wanting to do but can't because of my career ... well, it shouldn't be a surprise that they all, or almost, have something to do with food. :) I know I can't possibly do them all in two months, but I am determined to do them all, if not in my sabbaticals, in this lifetime for sure!
- Working on a cookbook about Taiwanese cuisine / 4 weeks
- This is something I've been wanting to do for a long time - spending a month in Taiwan visiting not just families & friends but also those places that I've never been to during the first twenty some years of my life living there. Aside from family & friends, what I miss most is the food there - GREAT tasting food is everywhere in this little Formosa. The world knows so much about Taiwan and yet they know so little about what a gastronomic gem Taiwan is. Instead of sitting there expecting others to tell the world about the wonder of my home town, I've decided I need to do it because I want to! My plan is to spend a month eating, traveling, researching, cooking, writing, photographing everything delicious in Taiwan.

- Doing a food-and-dining theme cruise (Mediterranean or Caribbean) / 2 weeks
- Dancing Tango every day & night in Buenos Aires, Argentina & eating Argentine Parrilla / 1 week
- Feasting on best Sushi & Sashimi available only in Japan / 1 week
- Taking a truffle vacation in France in winter
